This Week’s Grocery Haul: Smash Burgers, Burrito Bowls, and Feeding Four Hungry Boys in Connecticut

Another Saturday, Another Full Cart

If you’ve been following along here for a while, you know Saturday morning is my time. The boys are still waking up slowly, my wife is enjoying her coffee in peace, and I’m already walking the aisles of the store with my list and a rough plan for the week ahead. This week’s haul came together really well, and I’m genuinely excited about what we’re cooking. Let me walk you through what I grabbed and why.

What’s in the Cart This Week

The backbone of this week’s meals is protein, and I leaned in hard on that. I picked up two family-size trays of boneless chicken breasts, a large tray of 80% lean ground beef, and a four-pound box of Wellsley Farms 100% Angus Beef Patties — the 80/20 blend, twelve patties total. That might sound like a lot of meat, but when you have four growing boys ranging from six to fifteen, protein disappears fast around here. My oldest especially has been getting into lifting and paying more attention to what he eats, so I love that I can point to real, quality ingredients and say, “This is what fuels you.”

I also grabbed a bag of Birds Eye Garlic Chicken as a backup for one of those nights when we get home late from practice and everyone is starving and cranky. No shame in that. A good frozen option that actually tastes like something beats fast food every time, and this one has a solid amount of chicken in it — good enough to build a real meal around.

On the snack and side front, I picked up a big bag of Alexia Non-GMO Sweet Potato Fries with Sea Salt. These have become a household staple. The boys don’t even realize they’re eating something better for them than a standard fry, which is honestly the goal most of the time. Recipe One: Smash Burgers with Sweet Potato Fries

This one is going on the dinner table Thursday, and I already know there will be zero leftovers. I’m using the Angus beef patties and pressing them down hard on a screaming hot cast iron skillet — the smash burger method gives you that crispy, caramelized crust that makes a burger taste like something special without any complicated technique. We’re talking two minutes per side, a slice of cheese melted right on top, and served on those hamburger buns with a quick sauce I make from Daisy Sour Cream, a little garlic powder, and a splash of the Tostitos salsa stirred right in. It sounds simple because it is, and simple works.

The Alexia sweet potato fries go straight into the oven at 425 degrees while the burgers cook. By the time I’m plating, the fries are crispy and ready. My six-year-old, who normally picks at everything, will eat an entire plate of these without a word of complaint. That’s a win I document mentally every single time it happens.

This meal is also a great one for letting the boys build their own plates. I set everything out and let them assemble. They’re more likely to eat something they put together themselves, and it gives me a few quiet minutes to actually sit down before dinner hits the table.

Recipe Two: Chicken Burrito Bowl Night

This one is a family favorite and has been on our rotation for probably two years now. I season the boneless chicken breasts generously — cumin, chili powder, garlic, salt, a little smoked paprika — and cook them in a cast iron pan until they’re golden and cooked through, then slice them thin. I chop up the romaine hearts into a base, lay the chicken over the top, and set out the Mission Carb Balance tortillas, sour cream, and salsa so everyone can build their own bowl or wrap.

I think about that sometimes when dinner feels chaotic and loud — the food itself is secondary to the fact that we’re all at the table together. That’s the real nourishment.

The Quick Night Backup: Garlic Chicken Lettuce Wraps

For one night this week — probably Tuesday after the older boys have their evening activities — I’m heating up the Birds Eye Garlic Chicken and serving it right inside the romaine hearts as lettuce wraps with a drizzle of sour cream. Fifteen minutes from freezer to table, and it actually feels like a real, fresh meal because of the crisp romaine. The protein chips go on the side. Done. Everyone is fed and I still have energy left for bedtime prayers and books with the younger two.

Grateful for a Full Fridge
