Another Week, Another Loaded Cart

If you’ve followed this blog for any length of time, you know that feeding four growing boys in Connecticut is less of a hobby and more of a calling. This week’s grocery run was one of those satisfying hauls where I walked out of the store feeling genuinely good about what’s in the fridge. We’ve got fresh fruit, real protein, a couple of smart shortcuts, and enough bacon to make the whole house smell incredible three nights running. Let me walk you through what I grabbed and exactly what we’re doing with it this week.

What Came Home This Week

The cart was heavy, and I won’t pretend otherwise. We pulled in three gallons of milk because with boys ages 6 to 15, milk disappears faster than I can restock it. Alongside that, I picked up a big bag of Gala apples, a bag of pears, a whole watermelon, bananas, and some corn on the cob still in the bag. Summer produce in Connecticut right now is too good to pass up, and I’d rather my boys reach for an apple than anything processed when they’re wandering through the kitchen between meals.

On the protein side, we’re working with a couple of large packages of ground beef, three to four packages of bacon, a bag of frozen raw shrimp, Perdue Air Fryer Ready Crispy Wings, Perdue chicken strips and nuggets, and Jimmy Dean original sausage. For bread, we’ve got multiple packs of hamburger and sandwich buns. And yes, there’s a box of HC Fudge Bars in the freezer. The boys earned them.

I also picked up two boxes of Hot Pockets High Protein Chicken Bacon Ranch, which I know some folks might raise an eyebrow at on a healthy cooking blog. But here’s my honest take — on a Wednesday afternoon when my oldest has baseball practice and my youngest is melting down before dinner is ready, having a high-protein option I can throw in the air fryer in four minutes is part of a realistic family food strategy. Perfection isn’t the goal. Consistency is.

Recipe One: Bacon Smash Burgers with Watermelon on the Side

We’re kicking the week off with smash burgers, and I’m already looking forward to it. I’ll take the ground beef, form it into loose, palm-sized balls, and press them hard onto a screaming hot cast iron griddle. The smash technique gives you that crispy, caramelized crust that you just can’t get any other way. Midweek, when energy is lower and schedules are tighter, we’re doing a creamy shrimp and bacon pasta that comes together in about 30 minutes. I’ll thaw the raw shrimp the morning of — just leave the bag in cold water for 20 minutes and you’re set. While a pot of pasta cooks, I render down a few strips of bacon in a wide skillet, pull them out, and sauté the shrimp in that same pan with a little garlic and olive oil. The real magic comes when I add the Philadelphia cream cheese directly into the skillet with a splash of pasta water. It melts into this silky, rich sauce that coats every piece of pasta and makes even my most skeptical eater go back for seconds.

I’ll crumble the bacon back on top, add a little shredded mozzarella, and finish with fresh cracked pepper. This dish feels fancy enough that the boys think I worked all afternoon on it. We keep that between us.
