Another Week, Another Mission to Feed Four Growing Boys

If you’ve been following along here for a while, you know that feeding four boys between the ages of 6 and 15 is basically a full-time job on top of a full-time job. Every Sunday, I do a grocery run that has to check a lot of boxes at once — affordable, protein-packed, reasonably healthy, and something the boys will actually sit down and eat without complaints. This week’s haul came together pretty well, and I’m excited to share what I picked up and how I’m planning to turn it into real meals for the week ahead.

I grabbed everything at our local store, and I leaned hard into some staples that I know work for this family. Ground beef, eggs, tortillas — these are the workhorses of our kitchen. When I got home and started unloading bags on the counter, my oldest immediately started poking around asking what we were making. That’s always a good sign.

What’s in the Haul This Week

Let me walk you through the key items and why I chose each one. First up, I grabbed four cartons of Nellie’s Free Range Eggs. Yes, four. We go through eggs fast in this house, and I like Nellie’s because they’re free range and the quality is consistently good. Eggs are one of the most affordable high-protein foods you can buy, and they work in just about every meal from breakfast through dinner. A family of six burning through four dozen eggs in a week is completely normal around here — don’t judge me.

I picked up a large family-size package of 80/20 ground beef. The 80/20 blend has enough fat to cook up flavorful and juicy without being greasy, and it’s the most economical option for the quantity we need. This is going into multiple meals this week, which I’ll get into in a moment.

For tortillas, I went with Mission Carb Balance Whole Wheat. I’ve been using these for a couple of years now because they’re higher in fiber and lower in net carbs than regular flour tortillas, but they taste great and hold up well when you load them up. My boys genuinely cannot tell the difference, and that’s exactly what I want.

I grabbed two brands of sour cream — Daisy and Hood — because I had a coupon for one and the other was on sale. Both are great and they’ll disappear quickly this week as a topping across several meals. I also grabbed a bottle of Sriracha for the older boys who have been on a hot sauce kick lately. My 15-year-old puts it on everything, and honestly, I’m not mad about it. It’s a low-calorie way to add a ton of flavor.

For beverages, I picked up a 2-liter Coca-Cola Zero Sugar and a 12-pack of Barq’s Zero Sugar Root Beer. We’re not a household that drinks a lot of soda, but having some zero-sugar options around for the weekend or for Friday movie nights feels like a reasonable balance. It keeps the boys from feeling like they’re missing out without loading everyone up with sugar.

Rounding out the haul, I grabbed two bags of Food Club Cinnamon Raisin Swirl Bagels and one bag of their plain bagels, plus two containers of Breyers Carb Smart Ice Cream in two different flavors. The bagels are a quick breakfast staple and, as you’ll see, pull double duty in a dinner recipe this week. The Carb Smart ice cream is a treat I can feel okay about — lower sugar, still creamy and delicious, and the boys have no idea they’re eating something “lighter.” That’s a win.

What We’re Cooking This Week

With this haul, I mapped out three solid meals that will carry us through most of the week with enough leftovers to fill in the gaps.

The first thing on the menu is Beef and Egg Breakfast Burritos. This is a meal I’ve been making for years and it never gets old. I cook up the ground beef with some garlic, cumin, and a little salt, scramble a generous pile of eggs, and wrap everything up in the Mission Carb Balance tortillas. I set out the sour cream and Sriracha on the table so everyone can customize their own. My younger two keep it mild, my older two go heavy on the Sriracha. This is the kind of meal where everyone leaves the table full and happy, and it comes together in under 20 minutes. I usually make a big batch on Saturday morning and we all eat together before heading off to whatever the day holds. There’s something about a hot, hearty breakfast as a family that sets the tone for the whole day — it’s a small thing, but I’m grateful for those moments.

The second recipe this week is what I’m calling Sloppy Joe Bagel Melts, and the boys are already excited about it. I make a simple sloppy joe mixture with the seasoned ground beef, serve it open-faced on the plain bagels, and let everyone add a dollop of sour cream on top to cool down the heat a little. It sounds simple because it is, but my teenagers eat two or three of these in one sitting. It’s budget-friendly, it’s filling, and it uses ingredients I already have. That’s the sweet spot for a busy weeknight dinner when everyone gets home hungry and we have maybe 25 minutes before someone starts raiding the pantry.

Trusting the Process Week After Week

I don’t have it all figured out. Some weeks the meals are a bigger hit than others, and some weeks I open the fridge on Thursday and realize I need to improvise. But I keep coming back to the same truth that keeps this whole operation running — feed your family with what you have, do it with love, and keep it simple enough that you can actually do it consistently. That’s what this blog has always been about for me.
